RECIPE: Green Hulk Muffins

Benny has been eating these muffins since he was a baby.  This recipe has always been an easy, no-fuss way to get veggies into his diet. Serve the muffins for breakfast, send them in your child's lunch or bring them to a friend's house for the perfect kids "treat"!

5 Step Green Hulk Muffins

Ingredients:

  • 8 oz apple sauce
  • 1 cup spinach
  • 1 ripe banana
  • 1/4 cup sugar
  • 2 tbsp coconut oil
  • 1 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup finely shredded carrots

Instructions:

Step 1: Preheat oven to 350 degrees Fahrenheit.

Step 2: Combine spinach, apple sauce, banana, sugar and coconut oil in a food processor or blender.  Puree until smooth.

Step 3: In a bowl, mix flour, baking powder, baking soda and salt.

Step 4: Mix green pureed mixture into flour mixture.  Add in shredded carrots.

Step 5: Scoop into a greased muffin tin or use silicone liners. Bake for 14-17 minutes.
