Ingredients:
- 9 lasagna noodles - uncooked
- 1 jar of Pizza Girl marinara sauce
- 1 cup shredded mozzarella
Filling:
- 1 egg
- 15 oz Ricotta cheese
- 1 cup grated Parmesan cheese
- 15 oz spinach (wilted and squeezed), or if frozen (thawed and squeezed)
- Salt & Pepper to taste
Instructions:
Step 1: Preheat oven to 350°F.
Boil water and cook noodles according to package directions, then drain.
Step 2: Combine spinach, ricotta, Parmesan, egg, salt and black pepper in a medium bowl and mix.
Step 3: Ladle about 1 cup of sauce on the bottom of a baking dish.
Step 4: Place a piece of wax paper on the counter and lay out lasagna noodles to dry. Spread filling evenly over noodles. Roll each noodle carefully.
Step 5: Place each roll seam side down onto the baking dish. Ladle remaining sauce over the noodles and top each one with mozzarella cheese. Bake for 30-40 minutes, or until cheese melts. Makes 9 rolls.
